Ingredients
  

Peanut Sauce

  • 200 g Peanuts
  • 4 cloves Garlic
  • 1 Red Chilli Padi
  • 1 tbsp Salt
  • 1 tsp Belachan
  • 1 tsp Tamarind Paste/Pulp
  • 2 Calamansi Lime Juiced
  • 1 tbsp Kicap Manis
  • 1 cup Coconut Milk

Salad Ingredients

  • 4 Potatoes Peeled, Boiled and Cubed
  • 4 Eggs Peeled, Hard Boiled and Cut
  • 1/4 Cabbage Blanched and Shredded
  • 1/2 Cup Beansprouts Blanched
  • 1/2 Cup Snake Beans Blanched, cut
  • 1 Cucumber Sliced
  • 4 Tofu Deep Fried
  • 3-4 Emping Crackers

Instructions
 

  • Make the peanut sauce by blending everything except for the hot water in a food processor. Add just sufficient coconut milk to smooth out the dressing.
  • Boil you eggs, and potatoes and keep the poaching water to poach your cabbage, beansprouts and snake beans.
  • Deep fry your Tofu & sliced up cucumber
  • Finally mix together all the ingredients and dress with peanut sauce to serve.
