Crabmeat Omelette Fried Rice

Everyone love fried rice. It is a super simple and delicious dish to eat anytime. I was inspired to cook a crab meat fried rice after watching street food Asia on Netflix. There is this episode on Bangkok street food and this particular stall is very famous with their crab meat omelette and fried rice. The success of this fried rice is to serve it with a generous amount of fresh crab meat and a soft runny omelette! I hope Uncle Roger will approve this fried rice recipe of mine!

Equipment

Ingredients
  

  • 1.5 cups Leftover Rice
  • 2 qty Eggs beaten
  • 200 g Crabmeat plus 2 tbsp for garnish
  • 1 qty Egg for coating rice
  • 1 pinch Salt
  • 2 tbsp Soya Sauce
  • 1 pinch of White Pepper
  • 2 tbsp Green Onions chopped
  • 1 tbsp Tobiko
  • 2 qty Eggs beaten, for omelette
  • 3 tbsp Oil for frying

Instructions
 

  • In a mixing bowl, mix rice evenly with 1 egg. Mix well and set aside.
  • In a small bowl, crack 2 eggs and season with a pinch of salt. Mix well and set aside.
  • Heat a deep wok till it is smoky slightly.
  • Add oil in and pour in beaten eggs.
  • Quickly scramble the eggs and add in the rice coated with egg.
  • Give the rice a quick stir and add in crabmeat.
  • Season with white pepper and soya sauce.
  • Add in tobiko and green onions. You may add in another tablespoon of oil.
  • When the rice starts to jump, you can turn off the heat.
  • Using a non stick pan, make omelette.
  • Add in the beaten egg and turn off heat once the egg starts to bubble. (Do not overcook the omelette)
  • Scoop rice to a bowl and turn over the bowl onto a plate.
  • Transfer the omelette over the top of the rice.
  • Garnish with crabmeat and green onions.
  • Serve hot.

Notes

  • If you are using canned crab meat, make sure you get the jumbo lump 
  • Get the Thai seasoning sauce for best taste. It is called the Golden Mountain sauce. It has a mixture of Maggi seasoning sauce, light soya sauce and fish sauce. My to go sauce for a good plate of fried rice.
  • Overnight refrigerated rice is strongly recommend
