500gpeeled medium green king prawnswith tails, deveined
1red capsicumcut into thin strips
3shallotscut into 7cm lengths, finely shredded
1cupfresh coriander leaves
Instructions
Prepare noodles following packet directions. Transfer to a large bowl.
Meanwhile, heat a large frying pan or wok over high heat until just smoking. Spray with oil. Stir-fry the prawns for 4-5 minutes or until prawns curl and change colour.
Add the prawns, capsicum, shallot and coriander to the noodles. Toss to combine. Divide among serving bowls.
