Myulchu (Korean Anchovies) Gimbap

Gimbap is a korean style sushi roll where gim means seaweed and bap means rice. It is very different from the Japanese sushi because Gimbap uses only sesame oil and salt to season its rice while Japanese sushi uses sugar, salt and vingar. You can add anything inside your Gimbap and the most common ingredients are eggs, crabmeat, ham and seasoned vegetables. Myulchu Gimbap is now one of the hottest trending food in Korea. It is actually sweet and spicy fried anchovies wrapped in a Gimbap. You can make this delicious and convenient to eat Gimbap at home within 30 mins!

Ingredients
  

Rice

  • 2 cups Shortgrain Rice washed and drain
  • 2 1/2 cups Water

Rice Seasoning

  • 1/2 tsp Salt
  • 1 tbsp Sesame Oil

Gimbap Fillings

  • 2 tbsp Myulchi Bokkeum Korean anchovies
  • 1 each Cucumber julienned
  • 2 qty Egg
  • 1 each Carrot julienned
  • 20 grams Seasoned Mungbeans

Instructions
 

  • Cook rice using a rice cooker. When the rice is cooked, transfer to a big mixing bowl and season with sesame oil and salt. Rice must be completely cool before wrapping.
  • Prepare the eggs by beating the eggs in a small mixing bowl.
  • In a heated sqaure pan, add 1 tsp of oil and spread the egg mixture evenly to coat the entire pan.
  • Once egg is cooked, remove from pan and cut into strips for use.
  • Put a sheet of seaweed, shiny side facing downwards on a sushi bamboo mat. Spread the rice to about 3/4 length long on the seaweed sheet.
  • Assembly the myulchi bokkeum, egg strips, carrots, cucmber and season vegetables in the centre of the rice.
  • Carefully roll the seaweed and ensure the rice is not exposed. Apply pressure to secure the fillings inside the roll.
  • Cut Gimbap into 1/2 inch size for serving.

Notes

  • To save time, you can use store bought tamagoyaki to replace the egg strips.
  • You can customise and add any fillings of your choice.
